DESCRIPTION



It's a delicious Colombian food. This is native of the "Valle del Cauca",  a colombian western region where it is consumed daily by many people. It's a simple meal, that can be prepared by anyone and you can enjoy it, with your family. It's a delicious and nutritious meal.

INGREDIENTS

1   turkey finely chopped by pounds
1   pound of sausage
2   cups of  rice
10 cups of water
2  cups "hogao"
1  pound of yellow potatoes
1  sweet red pepper
2  tablespoons of cilantro
4  hard boiled eggs, peeled and chopped
Saffron, salt, pepper and cumin

PREPARATION

1. Cook a turkey  in a good stock for an hour or until it is soft
2. Remove the skin from the turkey, chop and fry it in hot oil, until it becomes crispy
3. remove the turkey bones
4. Chop the meat  of the  turkey in cubes
5. Fry the sausage, and in this fat, fry the turkey meat
6. Pour the water, place it over  medium heat until the rice opens
7. Cook the potatoes in the rice, for 25 minutes
8. Stir the rice until the bottom of the pan. The rice should  be wet. If  it gets dry, add more water    or stock and stir
9.  Serve with sliced fried plantains, and avocado salad
10. Sprinkle cilantro, along with the chopped eggs and the crispy turkey skin.

ANECTODE

More than an anectode, I want to share with you,  that I have many "caleño" friends and they always invited me to eat Arroz Atollado, but I don't like the rice. However, I tried it at their insistence and since then, this dish is one of my favorite Colombian foods.
