Coconut rice and shrimp
Description:
This is a typical dish of the Colombian coast more specificly of Cartagena Bolivar, this rice is delicious. Also it is very nutritious because it has shrimp which are rich in nutrients. This dish has a flavor without comparison. This is a good dish to share with your family.
Ingredients to use
- 1 tablespoon butter
- 1 medium onion, sliced 1/2 inch
- cloves and garlic, minced
- 1 can (14 ounces) coconut milk
- 2 cups long grain rice, uncooked
- 1/2 cups fish stock o water
- 2 pounds shrimp (prawns) medium, clean
- 1/2 cup chopped cilantro
- 2 tablespoons lime juice (lime)
PREPARATION
MELT butter in a large deep skillet or pot over medium heat iron. Add onion and garlic and cook for 2 minutes, stirring occasionally.
ADD the coconut milk, rice and fish broth, stir. Bring to a boil and cover. Reduce heat to low, cook slowly for 20 minutes. (Not all of the liquid will be absorbed.).
STIR the shrimp. Cover and simmer for 10 minutes or until shrimp turn pink. Remove from fire. Let it stand for 5 minutes. Add cilantro and lime juice (lime); stir.
ANECDOTE
6 years ago I was in Cartagena and I went to eat to a restaurant so muy father order this dish for the table, at first sight I did not like it, but then I decided to try it and I liked it very much, and since then I have been eating this dish in my special occasions.
